How much yeast for your rise time and temperature
There is no absolute right amount of yeast: it depends on how much time you have and how warm the room is. This tool works it out so your dough is ready when you decided — not an hour early, not three hours late.

The method
Fermentation is a job: a fixed amount of gas to produce to raise the dough. Twice the time needs half the workers — the yeast amount is inversely proportional to the rise time.
Temperature sets those workers’ speed: fermentation roughly doubles every 8 °C across the baking range. At 5 °C in the fridge, the same yeast works five times slower than at 24 °C — that is the principle of the slow proof, which develops flavour.
The calculation’s reference: 2% fresh yeast for 2 hours at 24 °C, a baking standard. The result is then converted for your yeast type (dry is more concentrated), and capped at 4% — beyond that, bread tastes of yeast.
In the formula: F is flour weight (g), t the duration (h), T the temperature (°C), k the yeast-type coefficient (1 fresh, 0.4 active dry, 0.33 instant).

Good to know
- Dough has its own temperature: warm or cold mixing water shifts the starting point. For a long rise, start with cool water.
- Salt slows yeast down and so does excess sugar (beyond ~10% of flour): very sweet doughs like brioche need slightly more yeast than calculated.
- Long-expired dry yeast works at half speed: test it in a glass of warm sugared water — it should foam within 10 minutes.
- The model holds for 4–35 °C: above 40 °C yeast dies, below 4 °C it is nearly dormant.
- The entered time runs from kneading to the oven, shaping included: it is the total that matters to the yeast.

- How do I convert between fresh and dry yeast?

Active dry is worth about 2.5 times its weight in fresh (10 g fresh ≈ 4 g active dry), instant about 3 times (10 g ≈ 3.3 g). The tool converts automatically: just pick your type from the list.
- Why does less yeast make better bread?

Because bread flavour mostly comes from secondary fermentation (lactic bacteria, enzymes), which needs time. Lots of yeast raises the dough fast but leaves no time for that work — you get a decent crumb with a flat taste, sometimes marked by the yeast itself.
- Does doubling the yeast make the dough rise twice as fast?

Almost, at first — then less and less: yeast exhausts available sugars and competes with itself. And flavour degrades before speed truly doubles. To go faster, warming the proof (26–28 °C) works better than overdosing.
- How do I know the dough has risen enough?

The poke test: gently press a floured fingertip in. If the dent springs back fast, the rise is not done; if it springs back slowly leaving a mark, it is time; if it does not spring back at all, the dough is over-proofed — shape and bake without waiting.
- Can I proof longer than 24 h in the fridge?

Yes, up to 48 h for pizza for instance: the calculation covers it. Beyond that, enzymes break down the gluten network and the dough turns sticky and fragile. For longer, freeze after the first rise instead.
- Does this apply to sourdough starter?

No: a starter is a living ecosystem whose strength varies from kitchen to kitchen — no universal formula holds. Sourdough quantities (15–30% of flour weight) are a different world from baker’s yeast.
